Chili Con Carne
This is a mild chili the whole family will enjoy.

1 Tablespoon vegetable oil
2 pounds ground beef
1 1/2 cups coarsely chopped onion
3/4 diced green onion
3 large garlic gloves chopped
3 16-ounce cans diced tomatoes (1 petite and 2 regular)
1/4 to 1/3 cup chili powder (to your taste)
1/8 Cayenne Pepper
2 16-ounce red kidney beans
Onion Powder
Garlic Powder
Salt and Pepper
Shredded Cheddar Cheese
Sour Cream and Chopped Scallion
Fresh Italian Buttered Bread
Black Olives
Over medium heat in vegetable oil, cook onions and green pepper for 10 minutes, remove to separate bowl. Add hamburg to pan. Season with Onion Powder, Garlic Powder, Salt and Pepper (to taste). Cook until hamburg is medium cooked (browned). Add tomatoes and their liquids, chili powder and cayenne pepper, heat to a boil. Cover and reduce to simmer for 45 minutes to 1 hour, stirring occasionally. Stir in beans with half of their liquid. Heat for 8-10 minutes and serve.
Serve with shredded cheddar cheese, black olives, sour cream with chopped scallions or with slices of buttered fresh Italian or French bread.
